Organic buckwheat is available in a couple of different forms: groats, kasha, and in-shell. Kasha is buckwheat that is toasted or roasted. It has a much darker reddish-brown color with a robust nutty scent to it. Even though buckwheat looks and sounds like it is a type of grain, it comes from the Fagopyrum plant and is gluten-free. Kasha can be used as an ingredient in soups as well as a component in salads. It can also be served sweet, both as a breakfast cereal and a dessert porridge or pudding.
