Organic couscous is made from whole grain durum wheat. First, the durum is husked and then either coarsely ground or unground to create the semolinas. The semolina is yellow. Then, mixing approximately 2/3 semolina with 1/3 durum flour, the couscous is created. It is a side-dish that can be used as an alternative to rice, potatoes, pasta or quinoa.
